1 Tbsp. Olive oil
3/4 lb. zucchini, quartered legthwise and sliced
3/4 lb. yellow squash, quartered lengthwise and sliced
1 med Red onion, chopped
1 (14 ounce) jar marinara sauce
1 (19 ounce) can white cannellini beans, drained and rinsed or chick peas
1/4 cup chopped fresh basil or 2 tsp. dried basil
3 Tbsp. FRENCH'S® Spicy Brown Mustard
1 1/3 cups FRENCH'S® Crispy Fried Onions
HEAT oven to 400°F. Heat oil in large skillet over medium-high heat. Sauté zucchini, squash and onion for 5 to 8 minutes or until crisp-tender.
STIR in marinara sauce, beans, basil and mustard. Bring to a boil. Spoon into shallow 2-quart baking dish.
SPRINKLE crushed Crispy Fried Onions over vegetables. Bake 20 minutes or until heated through and vegetables are tender. Serve warm.
