ZESTY ZUCCHINI AND BEAN CASSEROLE
Ingredients:
1 tablespoon olive oil
3/4 pound zucchini, quartered lengthwise and sliced
3/4 pound yellow squash, quartered lengthwise and sliced
1 red onion, chopped
1 (14 ounce) jar marinara sauce
1 (19 ounce) can white cannellini beans or chick peas, drained and rinsed
1/4 cup chopped fresh basil or 2 teaspoons dried basil
3 tablespoons FRENCH'S® Spicy Brown Mustard
1 1/3 cups FRENCH'S® French Fried Onions, finely crushed
Directions:
Heat oven to 400°F. Heat oil in large skillet over medium-high heat. Sauté zucchini, squash and onion for 5 to 8 minutes or until crisp-tender.
Stir in marinara sauce, beans, basil and mustard. Bring to a boil. Spoon into shallow 2-quart baking dish.
Sprinkle crushed French Fried Onions over vegetables. Bake 20 minutes or until heated through and vegetables are tender. Serve warm.
