STUFFED ZUCCHINI
Ingredients:
2 medium zucchini, scrubbed
2 tablespoons olive oil
1 large tomato, chopped
1 yellow or bell green pepper, finely chopped
1 cup finely cubed boiled ham
1/2 cup minced basil leaves
1 1/3 cups FRENCH'S® French Fried Onions
Directions:
Cut each zucchini in half lengthwise. Using a spoon or melon baller, scoop out the pulp leaving 1/4-inch shell. Set aside zucchini shells. Finely chop pulp.
Heat oil in a large skillet over high heat. Add zucchini pulp and tomato; cook until liquid is evaporated, stirring often. Add pepper, ham and basil; cook until pepper is tender. Stir in 1 cup French Fried Onions. Spoon filling into shells. Sprinkle remaining onions on top.
Place zucchini on a vegetable grilling rack set over medium heat. Grill zucchini 15 minutes or until tender.
Tips from French's Kitchen
Tip: Substitute 1/4 pound spicy sausage for the ham. Cook with pepper until sausage is browned.
