2 yellow squash
1 large red onion
1 red bell pepper
1 yellow bell pepper
Spicy Honey Mustard Dressing
SLICE all vegetables to approximately ¼-inch thickness.
TOSS to coat sliced vegetables with about half of the dressing, plus 2 tablespoon vegetable oil. If prepping ahead of time, store dressing coated vegetables refrigerated in a plastic zip-top bag until ready to grill.
GRILL vegetables over medium-high heat for about 5 minutes per side.
TOSS grilled vegetables with enough dressing to lightly coat all sides. Serve warm.
