1/2 cup FRENCH'S® Classic Yellow® Mustard Sweet or Honey Dijon Mustard
1/4 cup extra virgin olive oil
2 Tbsp. cider vinegar
1 Tbsp. orange juice
1 clove garlic, minced
6 cups quinoa
2 cups chopped arugula
2 cups chopped, raw cauliflower
1 cup shredded carrot
1/2 cup diced red onion
salt and black pepper to taste
WHISK together Mustard, olive oil, vinegar, organge juice, and garlic together until well blended and smooth. Set aside.
COMBINE quinoa, arugula, cauliflower, carrot and onion together in large bowl.
POUR dressing over and toss until evenly coated. Season with salt and pepper to taste.
