1 1/2 lbs. salmon fillet, 1 inch thick, divided into 4 portions
1 Tbsp. butter, melted
1 salt and pepper to taste
1 cup FRENCH'S® Potato Sticks, lightly crushed
1 Tbsp. Lemon juice
1 Tbsp. chopped fresh thyme
1 tsp. lemon zest
1 tsp. minced garlic
PLACE salmon pieces on greased shallow baking pan. Brush with butter; sprinkle with salt and pepper to taste.
MIX potato sticks, lemon juice, thyme, lemon zest and garlic in small bowl. Press mixture evenly on salmon pieces.
BAKE at 350°F for 20 min. or until salmon flakes easily with fork. Cover fish with foil if topping becomes too dark during cooking.
