8 whole wheat tortillas, 7 inch
2 cups (8 ounces) shredded Monterey Jack cheese with jalapeño pepper, divided
1 1/3 cups FRENCH'S® Crispy Fried Onions
1 (7 ounce) jar roasted red peppers, drained and thinly sliced
1 salsa (optional)
PLACE 4 tortillas on a sheet of waxed paper. Sprinkle 1/4 cup cheese over each tortilla. Arrange roasted peppers and Crispy Fried Onions evenly over cheese. Sprinkle remaining cheese over onion layer. Top each layered tortilla with another tortilla, pressing down firmly.
HEAT a nonstick skillet over medium heat; spray with nonstick cooking spray. Using a large spatula, place a 1 quesadilla in the skillet. Cook, pressing down with the spatula, 2 to 3 minutes per side or until the cheese melts and the tortillas brown slightly. Repeat with remaining quesadillas.
TO SERVE, cut each quesadilla into fourths. Serve with salsa, if desired.
