1 1/2 cups shredded Monterey Jack cheese
1/2 of a red or yellow bell pepper, chopped
4 oz. sliced smoked ham or turkey, cut into thin strips
1/4 cup finely chopped green onions
1/3 cup FRENCH'S® Spicy Brown Mustard or FRENCH'S® Classic Yellow® Mustard
2 tsp. ground cumin
10 (6 inch) flour tortillas
COMBINE cheese, bell pepper, ham and onion in medium bowl. Mix mustard and cumin in small bowl.
PLACE tortillas on work surface. Spread about 1 teaspoon mustard mixture on each tortilla. Top 5 of the tortillas with cheese mixture, dividing evenly. Cover each with second tortilla, spread side down, to form a quesadilla.
COOK quesadillas on greased electric grill pan or barbecue grill for 2 minutes until cheese melts. Cut into quarters. Serve with salsa and cilantro if desired.
