2 Tbsp. vegetable oil
8 ounces smoked sausage, sliced
1 lb. boneless, skinless chicken breast halves, cut into 2-inch pieces
1 cup chopped onion, green bell pepper and celery
3 garlic, minced
4 cups chicken broth
1 (14 1/2 ounce) can diced tomatoes in juice
3 Tbsp. FRENCH'S® Classic Yellow® Mustard
1/2 tsp. thyme
1 1/2 cups uncooked rice
8 ounces large shrimp, peeled and deveined
1 chopped fresh parsley
HEAT 1 tablespoon oil in large, deep skillet and brown sausage and chicken in batches. Remove and set aside.
ADD remaining tablespoon oil and cook onion, pepper and celery 5 minutes, stirring occasionally, until tender. Add garlic and cook 1 minute.
STIR in chicken broth, tomatoes with their juice, FRENCH'S® Classic Yellow® Mustard and thyme and bring to a boil. Stir in rice and simmer, covered 15 minutes.
RETURN sausage and chicken to skillet and add shrimp. Simmer, covered, 5 minutes or until chicken and shrimp are done. Let stand 5 minutes. Sprinkle with chopped fresh parsley.
