1 1/2 lbs. red potatoes, peeled and cubed
1 1/4 tsp. salt, divided
1/2 cup light sour cream
1/3 cup FRENCH'S® Honey Mustard
1/3 cup plain nonfat yogurt
1 large hard-cooked egg, chopped (optional)
1 cup celery
1 large shallot, minced
1/4 cup parsely
Boil potatoes with 1/2 tsp. salt in water to cover for 12 min. until potatoes are tender. Drain and cool.
Combine sour cream, mustard, yogurt and 3/4 tsp. salt in large bowl. Toss in potatoes, egg (if using), celery, shallot and parsley; mix well.
Chill 1 hour before serving.
