Couscous Provencal

Couscous Provencal

Ingredients

2 1/4 cups Water
1 (10 ounce) box couscous
2 med tomatoes, seeded and chopped
1 1/3 cups FRENCH'S® Crispy Fried Onions
1/4 cup chopped pitted Kalamata olives
1/4 cup chopped fresh mint
1/4 cup fresh lemon juice
3 Tbsp. Olive oil
1 tsp. ground cumin
3/4 tsp. salt
1/4 tsp. pepper

Directions

IN MEDIUM saucepan, bring water to a boil. Stir in couscous. Cover and remove from heat. Let stand 5 minutes.
STIR in remaining ingredients except 2/3 cup Crispy Fried Onions. Transfer to serving bowl. Sprinkle remaining Onions on top.
