COUSCOUS PROVENCAL
Ingredients:
2 1/4 cups water
1 box (10 ounces) couscous
2 medium tomatoes, seeded and chopped
1 1/3 cups FRENCH'S® French Fried Onions
1/4 cup chopped pitted kalamata olives
1/4 cup chopped fresh mint
1/4 cup fresh lemon juice
3 tablespoons olive oil
1 teaspoon ground cumin
3/4 teaspoon salt
1/4 teaspoon pepper
Directions:
In medium saucepan, bring water to a boil. Stir in couscous. Cover and remove from heat. Let stand 5 minutes.
Stir in remaining ingredients except 2/3 cup French Fried Onions. Transfer to serving bowl. Sprinkle remaining onions on top.
