COUNTRY CORN PUDDING
Ingredients:
2 cups milk
1/4 cup butter or margarine, melted
1/2 cup yellow cornmeal
1 tablespoon sugar
1/2 teaspoon salt
4 large eggs, beaten
2 tablespoons FRANK'S® RedHot® Original Cayenne Pepper Sauce
1 can (11 ounces) Mexican-style corn, drained
1 1/3 cups FRENCH'S® French Fried Onions
1 cup shredded Cheddar cheese
1/2 teaspoon baking powder
Salsa (optional)
Directions:
Whisk together milk, butter, cornmeal, sugar and salt in 3-quart microwave-safe bowl. Cover with vented plastic wrap and microwave on HIGH 8 minutes or until mixture is very thick and almost all of the liquid is absorbed, whisking twice. Mixture should mound when dropped from spoon.
Combine eggs, Frank's RedHot Sauce, corn, 2/3 cup French Fried Onions, cheese and baking powder in medium bowl. Stir egg mixture into cornmeal mixture.
Microwave, uncovered, on HIGH 6 minutes, stirring once. Smooth top of corn mixture. Microwave, uncovered, on MEDIUM (50%) 5 minutes or until knife inserted in center comes out clean. Sprinkle with remaining onions. Microwave on MEDIUM 1 minute or until onions are golden. Serve with salsa, if desired.
