1 lb. ground beef
1 small onion, chopped
8 oz. red potatoes, cut into 1/2-inch pieces (about 2 cups)
1/2 tsp. salt
1/2 cup FRENCH'S® Tomato Ketchup
2 Tbsp. French's® Classic Worcestershire Sauce
2 Tbsp. FRENCH'S® Classic Yellow® Mustard
1 cup chopped tomato
4 cups beef broth
2 cups shredded cheddar cheese, divided
1/2 cup croutons, optional
1/2 cup cooked, crumbled bacon, optional
Brown ground beef and onion in 4-quart sauce pot; remove. Add potatoes to drippings and cook 7 minutes, stirring occasionally until just tender.
Stir in Ketchup, Worcestershire and Mustard and cook 2 minutes.
Stir in tomato and beef broth and bring to a boil over high heat. Return beef to pot; reduce heat to low and simmer 5 minutes or until potatoes are tender. Stir in 1 cup cheddar cheese.
Ladle soup into bowls and top with croutons, remaining cheese and bacon.
Burger Bun Croutons: Toss 2 hamburger buns, cut into bite-sized pieces, with 2 tablespoons Ketchup. Arrange on lightly greased baking sheet and bake at 400°F for 10 minutes or until crisp.
