1 1/2 lbs. ground beef
1/2 cup plus 2 Tbsp. FRENCH'S® Classic Yellow® Mustard , divided
1/2 cup plus 1 Tbsp. FRENCH'S® Tomato Ketchup , divided
1/2 cup dill pickle relish or chopped dill pickle
1 cup chopped tomato
1 1/2 cups shredded cheddar cheese , divided
1 (10 oz.) can enchilada sauce
6 flour tortillas (10-inch)
PREHEAT oven to 350°F. Brown ground beef in large skillet and drain. Stir in 1/2 cup Mustard, 1/2 cup Ketchup and relish and bring to a boil over high heat. Reduce heat and simmer 3 minutes. Stir in tomato and 1 cup cheese.
COMBINE enchilada sauce with remaining Mustard and Ketchup. Spread 1/2 cup sauce over bottom of 12 x 8-inch baking dish. Divide ground beef mixture evenly among tortillas and roll up.
ARRANGE tortillas, seam side down, in baking dish and pour remaining sauce over tortillas.
BAKE covered, 20 minutes. Uncover, sprinkle with remaining cheese and bake 5 minutes or until cheese is melted.
