It is easy, nutritious and absolutely delicious!
Ingredients:
1 cup FRENCH'S® French Fried Onions
1 lb Zucchini
1/3 cup Olive Oil
1 oz Lemon
1 tbsp Salt Cured Capers, Chopped
1 tbsp Finely Chopped Dill (Less if dried)
Directions:
Combine olive oil, lemon juice, capers, dill and salt & pepper in a bowl and set aside.
Cut zucchini in half lengthwise and scoop insides out using a grapefruit spoon. Chop coarsely. Add to lemon & olive oil mixture. Place scoopfuls of mixture into zucchini shells and top each with French’s French Fried Onions.
Bake in 350 oven for approximately 30 minutes until tops are brown and crispy and zucchini is al dente'.
May be served with crumbled goat cheese for an elegant side dish.
