Zucchini Casserole Royal

Everyone always asks what makes it yellow. (French's, of course) And they always ask for the recipe--even zucchini haters. It's a delightfully different way to serve something that comes from our gardens in such abundance.

Ingredients:

1 tbsp FRENCH'S® Classic Yellow® Mustard

1/2 cup Mayonnaise

1/2 cup Parmesan cheese, grated

1/2 cup eggs, slightly beaten (2)

8 cup zucchini, sliced 1/4 inch

1/2 cup onion, chopped

1/4 cup green pepper, chopped

1/2 tsp salt

1/4 tsp pepper

Directions:

Steam vegetables until Zucchini is tender crisp. Drain. Mix eggs, Mayonnaise, cheese, mustard, salt and pepper. Add gently to vegetables. Bake uncovered at 350 for 30 minutes just until custard is set.
I use the 6mm blade of my food processer to slice the zucchini. To be fancier, you can saute the onion and green pepper and add buttered crumbs on the casserole top. When I'm in a hurry, I can make this whole process in the microwave.
