Yukon potatoes stand up well to boiling and maybe new to some. Garlic pickles coarsely chopped balance better than pickle relish. Just enough different that "usual" potato salad to bring out grins.
Ingredients:
1/3 cup FRENCH'S® Classic Yellow® Mustard
4 cup 8 Yukon Gold Potatoes
1 cup Miracle Whip
1 cup Garlic Dill Pickles
0.5 pt Yellow Onion
3 tbsp salt
3 tbsp pepper
Directions:
Boil 8 Yukon Gold potatoes until tender, about 40 minutes. Peel potatoes and dice. Coarse chop garlic pickles to equal 1 cup. Chop 1 yellow onion. Stir potatoes, pickles, chopped onion, mustard and Miracle Whip with salt and fresh ground black pepper. Serve.
