When All Else Fails Casserole

I fixed this for the first time when my children were small. They are now adults and have always told their friends that this was "their Mom's" recipe, no one else could make it. Sure does make me smile!

Ingredients:

6 oz FRENCH'S® French Fried Onions

1 lb Lean Ground Beef

15 oz Pinto Beans

12 oz Rotel

16 oz Pepper Jack Shredded Cheese

2 cup Boil In Bag Rice

Directions:

Preheat oven to 350 degrees. Boil 6 cups of water and add bag of rice. Cook per package instructions. While rice is cooking, brown one pound of lean ground beef and drain well.Drain liquid from one can of pinto beans. May also use red beans or any other favorites. Leave the juice with one can of Rotel. When rice and burger is done, mix all ingredients except Fried Onions in a 9x13 baking pan. Bake at 350 degrees for about 15 minutes or until cheese is melted. Remove from oven, add fried onions on top and return to oven for five additional minutes. (Many times I have added more cheese, depending on who was having the meal)
I couldn't think of what to cook one night, so found these ingredients and just "threw" them together. Has become a family favorite. Great for game day or to take to work for that potluck meal. My children like this with tortilla chips or even wrapped in a flour tortilla. Easy to remember this recipe, just use ONE of everything, one can, one pound, one bag.
