Tex-Mex Chicken Fajita Bow Tie Fiesta Casserole

I told the family we were having a formal dinner. They looked at me like I was crazy. The smiles came when they saw it was a "Bow Tie" casserole.

4 cup FRENCH'S® Cheddar French Fried Onions

2 cup chunky salsa (your choice mild, medium, or hot)

2 cup milk

3 cup shredded Mexican Blend cheese, divided

3 cup Faralle (Bow Tie) Pasta cooked al Dente (see package directions) (1 1/2 cups uncooked)

1 lb fully cooked Chicken Fajita Strips, cut in 1/2 to 3/4 inch pieces

16 oz canned refried beans

8.8 oz Uncle Ben’s Spanish Style Ready Rice


Preheat the oven 375 degrees. Place the French’s Cheddar French Fried Onions in a medium size bowl. Gently blend in the salsa. Pour the milk in medium sauce pan. Place on medium heat, add 2 1/2 cups cheese, and stir often until melted. In a large bowl blend the cooked pasta, chicken Fajita cut in 1/2 inch pieces, refried beans, rice, 1/2 of the French’s Cheddar French Fried Onions/ salsa mixture, and the melted cheese together. Spoon into a 3-quart prepared casserole dish. Cover and bake 30 minutes or until hot and bubbly. Stir the casserole, spread the remaining onions/salsa mixture on top, sprinkle on the remaining cheese, and bake uncovered for another 10 minutes.
Serve with warmed flour tortillas, chips, guacamole, and dips.
