French's Classic Yellow Mustard reminds me of my childhood. This potato salad dressing was handed down to 3 generations of my family. It brings back memories of making this recipe with my Grandmother and Aunt in my Grandmother's kitchen.
Ingredients:
1 tsp FRENCH'S® Classic Yellow® Mustard
1/2 cup Cooked Diced Turkey Bacon
3 lb Sweet Potatoes
1/2 cup Diced Onion
3/4 cup Mayonnaise
3/4 tsp Sugar
1 tbsp Milk
3/4 tsp Apple Cider Vinegar
8 cup water
2 tsp salt
3/4 tsp pepper
Directions:
Wash, Peel and Dice Sweet Potatoes. Add 1 tsp of salt to water and boil sweet potatoes until fork tender (approx. 10 minutes). Drain and rinse under cold water and place in a large bowl.
Add chopped turkey bacon,diced onion and 1/2 tsp each of salt and pepper.
In a separate bowl, wisk together the mayonnaise, French's Classic Yellow Mustard, sugar, milk, apple cider vinegar and 1/2 tsp of salt and 1/4 tsp of pepper. Pour over potato mixture, blend ingredients together, chill and serve.
