stuffed turkey cutlets

My daughter requests this recipe every week after her tap dance class. Sometimes friends tag along!

Ingredients:

1 cup FRENCH'S® French Fried Onions

2 lb turkey cutlets

1 lb green asparagus

1 cup roasted marinated red sweet peppers

1 lb feta cheese

4 tbsp olive oil

8 oz black olives

2 tbsp fresh garlic

2 cup water

Directions:

Cut 4 cutlets from 1 boneless turkey breast Gently pound flat for stuffing Crumble French's Onion Straws evenly on each cutlet Thinly slice roasted pepper into strips and place evenly on each cutlet Layer blanched asparagus on top of roasted peppers Crumble half feta cheese evenly on each cutlet Sprinkle sliced blacked olives on top of cheese Gently roll cutlets and secure with toothpicks Heat olive oil in oven proof sautee pan Add minced garlic being careful not to burn Add cutlets and sear for two minutes on each side Add remaining feta to top of each cutlet Finish in 350 degree oven for ten to fifteen minutes Transfer to individual serving plates garnished with sage leaves
Asparagus should be blanched in boiling water for 15 seconds and placed in ice bath to retain color Chicken may be substituted for turkey
