As soon as my husband walks in the door, he knows it's a meatloaf night and cheers. My 4 year old daughter and my 2 year old son love this version of meatloaf. Especially the cheese in the middle.
Ingredients:
2 tbsp FRENCH'S® Classic Yellow® Mustard
1 cup Ketchup
1 Egg
1 cup Dry Seasoned Bread Crumbs
1/2 cup Chopped Onion
1 lb Lean Ground Beef
16 oz Ground Pork Sausage
4 String Cheese Sticks
1 tsp pepper
Directions:
Combine 1/2 C Ketchup(reserve other 1/2 to baste the loafs), Egg, Bread Crumbs, Onion and Mustard in a bowl. (Add pepper to according to your taste.) Crumble the Beef and the Sausage over mixture and mix well. Score the mixture in half, and in half again to create 4 equal portions. Take each portion and create a loaf around 1 string cheese stick, sealing the sides well so no cheese sticks out. Place it on a tall sided cookie sheet. Make 3 more loaves and place them equally apart on the cookie sheet. Bake at 350 degrees for 40-50 minutes until the inside reaches 160 degree temperature. Enjoy...
For those of you who love a spicy kick, you can replace 1/2 of the sausage with hot spicy sausage. I love to use the 16oz. Sausage rolls, 1 mild and 1 hot. Just cut them in half and freeze the halves you don't use for next time!!
This recipe is great for leftovers. You can slice it up and put it in a bun for a great sandwich.
