Spicy Tex Mex Chicken Soup

Don’t we all relish smiles on faces of those we love? My family loves Mexican food, and I love to give them smart, healthy, foods that are tasty and fun to eat. This soup fits the bill! The delicious spicy, tomato broth, corn, and shredded chicken make this a hearty soup, while the French’s Fried Onions and avocados add interest and tasty goodness. My family loves it and the proof is in their smiles (and empty bowls)!

Ingredients:

1 cup FRENCH'S® Cheddar French Fried Onions

1 tbsp chipotle (in adobo), seeded, well rinsed, and finely chopped

14.5 oz fire roasted tomatoes (2 cans)

5 cup chicken stock or chicken broth

11 oz can corn

2 cup cooked, shredded chicken

1 cup avocado, thinly sliced

3 tbsp fresh cilantro, finely chopped

1/2 tsp salt

Directions:

1. Puree chipotle and tomatoes in food processor. 2. Pour the tomato puree into a large saucepan. Add chicken stock and salt. Cook over medium heat, until soup begins to simmer. Reduce heat to low. Add shredded chicken and corn. Stir and cook until heated through. 3. When ready to serve, ladle soup into soup bowls. Into each soup bowl, sprinkle 2 tablespoons of French’s French Fried Cheddar Onions, add 3-4 slices of avocados, and sprinkle with cilantro. Serve warm.
