My father loves spicy foods. I came up with this recipe for him and it has been a big hit with the family. I make it for our family get togethers and it satisfies the hot pepper lovers as well as the potato salad lovers. Sometimes I make a batch with the peppers and one without to keep everyone happy. Spicy Southern Potato Salad is a new twist on an old favorite.
4 tbsp FRENCH'S® Spicy Brown Mustard
2 lb Potatoes
1 Jalapeno Peppers
4 Green Onions
1/2 cup Mayonnaise
1/2 cup Sour Cream
Bring 8 cups of water to boil with 1 teaspoon of salt. In second pot bring two cups of water with the eggs to a boil. Boil eggs for ten minutes and remove from heat. Peel and dice potatoes, place in boiling water and cook for 20 minutes and drain. While potatoes are cooking, peel cucumbers, take seeds out of pepper, and peel eggs. Then chop cucumber, pepper, onions, and eggs into bite sizes. When potatoes are done remove from heat and drain. Place potatoes in large bowl, add chopped vegetables, mayonnaise, sour cream and spicy mustard. Add remaining salt and pepper to taste. Mix all ingredients well and serve.
