Ingredients:
2 cup FRENCH'S® French Fried Onions
1 tbsp FRENCH'S® Honey Mustard
24 oz Tilapia (6 4-oz filets)
6 oz Packaged Broccoli Slaw
3 cup Medium Salsa
1/2 cup Extra Virgin Olive Oil
1.5 tsp Ground Chipotle Chili Pepper, divided
8 Whole Wheat Tortillas (8")
Directions:
In a large bowl, whisk together the olive oil, French's Honey Mustard, 3/4 tsp. ground chipotle chili pepper, salt and black pepper. Lightly brush each side of the tortillas with a small amount of the marinade. Stack the tortillas, cover with plastic wrap and set aside. Place the fish in the remaining marinade, mixing the fish gently to thoroughly coat. Marinate for 45 minutes, turning the fish occasionally.
While the fish is marinating, combine the salsa with the remaining 3/4 tsp. ground chipotle chili pepper. Set aside.
After the fish has marinated for 30 minutes, preheat the grill for 10 minutes on medium heat. Once preheated, grill each tortilla for 30-45 seconds on each side. Stack the tortillas and wrap in foil to keep warm. Remove the fish from the marinade. Place the fish on the grill, cover and cook the first side for 2-3 minutes. Turn fish over and cook second side for additional 2 minutes. (Fish is done when it gently flakes with a fork.) Remove the fish from the grill and allow it to cool slightly. Gently cut the fish into bite-sized pieces.
To assemble the tacos, place approximately 3 oz. of the grilled fish in the middle of a tortilla, spreading to the outer edges. Top with a portion of the broccoli slaw, chipotle-spiced salsa, and the French's French Fried Onions. Roll the taco and place seam side down. If desired, top the rolled taco with additional salsa and French's French Fried Onions.
24 oz. Tilapia is equivalent to 6 4-oz. filets.
Flour tortillas may be substituted for the whole wheat tortills.
