Spicy Fried Chicken

I was making regular fried chicken with mayo (we were out of eggs) when it occurred to me that I could make could make it so much spicier. So I experimented with various amounts of spices and everyone agreed the spicy alternative was superior.

Ingredients:

1 cup FRENCH'S® Bold n' Spicy Brown Mustard

3/4 cup all purpose flour

1 tbsp cayenne pepper

4 tsp chili powder

3 boneless skinless chicken breast

4 cup cooking oil

1 tsp water

2 tsp pepper

Directions:

Cut chicken into strips, the skinnier they are, the faster and more completely they will cook. Mix flour and spices on a plate and in a separate, flat bowl, mix mustard and water. Heat oil in a deep frying pan. As the oil is heating, thoroughly cover chicken with mustard and then roll in flour mixture. Carefully place several prepared chicken strips into hot oil for 3-7 minutes (as oil gets hotter the cooking time will decrease) and remove with tongs onto a paper towel. Serve warm.
You can either prepare all the chicken ahead of time while the oil is warming, or prepare a few and while those few are cooking prepare more. The latter is my preferred method because it gives me something to do while waiting for the chicken to cook. Also, to cut thinner strips of chicken, use only partially defrosted chicken, because the frozen center is easier to cut.
