Simple Salmon Baskets

These are mini gormet appetizers that are great for parties, an afternoon with my girlfriends or for an after school snack for my kids. They are so simple to make but look gormet and taste even better! These are ready to serve in less than 30 minutes and they are always the first ones to be eaten.

6 oz FRENCH'S® French Fried Onions

8 oz Container of chive & onion cream cheese

4 oz Sliced smoked salmon

6 Sprigs of fresh chives

1 Large Egg

1 tbsp All Purpose Flour


Gently crush French's French Fried Onions in a bowl to a coarse consistency (about 1/2" pieces.) Sprinkle 1 tbsp of all-purpose flour onto onions and add a beaten egg into mixture until well incorporated. Press mixture into a 24 cup mini muffin pan, filling about 1/2 full, creating a basket with the mixture partially up the sides of the cups. Bake at 350 degrees for about 10 minutes or until golden brown. Gently remove baskets from pan to cool (about 5 minutes). Add 2 tbsp of chive & onion cream cheese into a piping bag and fill each basket with a layer of cream cheese (about 1/4" thick). Cut smoked salmon slices into 1" X 2" pieces and gently fold in half and lay on top of each basket. Add a small dollop of cream cheese on top of the salmon and sprinkle with a few finely chopped fresh chives for garnish.
One of my dearest friends heard about your contest and encouraged me to submit this recipe. She is a breast cancer survivor and I wanted to submit a "pink" recipe to commemorate breast cancer awareness in her honor. I have never done a recipe contest before so here it goes.
