Seafood Cakes

They go really fast everytime I make them.

Ingredients:

2 cup FRENCH'S® French Fried Onions

6 oz Pink Salmon, drained

6 oz White Albacore Tuna, drained

1 zest & juice lemon

1/4 cup Italian parsley, chopped

3/4 cup Italian seasoned bread crumbs

1/2 cup 3-cheese blend shredded Asiago, Romano,& Parmesan Cheese

1 egg

Directions:

Blend Tuna & salmon with a fork breaking up large clumps. Add lemon & zest, parsley, egg, bread crums, cheese, & 1/2 cup of the crushed French's onion rings. mix well. Place remaining French's onion rings in shallow dish. Heat a large fry pan over med. high heat. Coat bottom with olive oil. While pan is heating, divide into 8 equal patties. Press both sides of pattes into crushed onions. Fry patties 2-3 minutes per side. 2 patties per serving.
