Scrumptious Spinach Squares Appetizer

I have been making this recipe for 20 years and have shared it with friends and family. It is at the point that if I don't bring them, I may as well not show up! Knowing how difficult it is to get children to eat vegetables, they absolutely love them! I usually double the recipe and they freeze extremely well (though there are rarely any left over!).

Ingredients:

2.8 oz FRENCH'S® French Fried Onions Products

10 oz chopped spinach, thawed and drained

3 eggs or comparable whites

4 oz shredded mozzarella (skim or whole milk)

1/8 tsp garlic powder

4 oz can mushroom pieces or slices, cut into bite sized pieces

1/8 cup sour cream (lite or whole milk)

1/8 tsp pepper

Directions:

Beat eggs and combine all except Onion Rings (crunch them slightly while still in can, reserving a bit for the top)and add as last ingredient. Spoon evenly into greased 8" X 8" pan (should be no more than about 1/2-3/4" thick). Bake at 350 for about 45 minutes (should be browned on top). Cut into 3" squares and serve as appetizer or side dish. Highly recommended to double the recipe (and use appropriate size pan). They freeze well.
