Scalloped Ham, zucchini, potato casserole

A one dish, fast and easy to prepare meal would bring a smile to anyones' face. This casserole can be made ahead and leftovers (if any) freeze well.

Ingredients:

2 cup FRENCH'S® French Fried Onions

1/2 lb Thin slices deli ham

4 cup medium potatoes

2 cup medium zucchini

2 cup Cream of mushroom soup

4 tbsp Milk

3 cup Shredded cheddar cheese

2 tbsp butter or margarine

1/4 tsp salt

1/4 tsp pepper

Directions:

Pre-heat oven to 400 degrees Grease 2 qt. casserole. Peel potatoes and zucchini. Cut vegetables and ham into bite size pieces. In casserole mix ham, potatoes, zuchini, 1/2 of FRENCHS-french fried onions, 1/2 of cheese, dash of salt (optional), dash of pepper. Layer rest of cheese, french fries onions on top of casserole. In small bowl mix mushrom soup and milk. Pour over top of casserole. Bake for 40 minutes or until potatoes are done and top is bubbly and brown. Serves 4-6
Potatoes may be slightly cooked before addition to casserole to shorten baking time.
