Rice Balls

My entire family, including my 2-year-old daughter, loves this recipe! It reminds me of the rice balls my grandmother used to make, but with a new twist thanks to FRENCH'S!

Ingredients:

3 cup FRENCH'S® Cheddar French Fried Onions

1 cup uncooked Arborio rice

4 oz chopped beef

2 tbsp tomato paste

1/2 cup salted butter

3 tbsp grated Parmesan cheese

1 gal vegetable oil for frying

3 eggs, beaten

1 cup water

1/2 tsp salt

1/2 tsp pepper

Directions:

Cook rice according to package directions in boiling water until tender. Add butter & Parmesan and set aside to cool. Meanwhile, lightly brown chopped meat in a frying pan. Add 1/2 cup of FRENCH'S Cheddar French Fried Onions and stir well. Add tomato paste & 1 cup water, and cook approximately 15 minutes, or until mixture has thickened and reduced. Add salt & pepper to taste. Using the cooled rice mixture, make balls of rice, placing approximately 1 tbsp of the meat mixture inside each ball of rice. This recipe will make at least 6 rice balls. Crush remaining 2 1/2 cups of FRENCH'S Cheddar French Fried Onions until they are small crumbs. Dip rice balls into egg, roll in crumbs, and fry in hot oil until golden brown all over. You may use a frying pan or a deep fryer. (4 minutes at 340 degrees in a deep fryer)
Amount of vegetable oil will vary, depending on method of frying used. If a frying pan is used, less oil will be required. If a deep fryer is used, amount of oil will depend on capacity of deep fryer.
