Pumped Up White Bean and Spinach Salad

When a dish tastes great, and is healthy too, how can a family not smile? The added bonus is this requires very little of your time--it can be a last minute, got baseball, tons of homework and a meeting tonight kind of side. Your family, and just as importantly, you as the chef and Jack or Jill of all trades will Love this!! ...and an added bonus, it's delicious leftover too!

Ingredients:

1 tsp FRENCH'S® Classic Worcestershire Sauce

1 tsp FRENCH'S® Bold n' Spicy Brown Mustard

1 tbsp fresh squeezed lemon juice

1 clove finely minced garlic

2 tsp fresh rosemary or thyme, chopped

1 tbsp extra virgin olive oil

1 15.8 ounce can Great Northern Beans

2 cup fresh baby spinach

0.5 tsp salt

0.5 tsp pepper

Directions:

Whisk together first 6 ingredients. Drain and rinse beans. Toss beans, spinach and dressing in a bowl. Salt and Pepper to taste. Delicious as a side to any meat, fish or poultry or serve as part of a simple vegetarian meal with a piece of whole grain baquette. I strongly suggest you try it as part of my Pumped Up Pork and Beans. (recipe submitted separately).
If you'd like to cut all the fat from the dish, substitute water for the olive oil--sounds crazy, but it is delicious this way too!
