This recipe gets major thumbs up form my husband and family! It's fast and easy to make, but the taste is restaurant quality! The mustard gives it delicious tang and and the pretzel-onion crust makes it so flavorful! You cannot go wrong with this! It's easy, fast, and one of the best tasting chicken dishes you will ever taste! And it's healthy too!
Ingredients:
1/4 cup FRENCH'S® Classic Yellow® Mustard
1/2 cup FRENCH'S® French Fried Onions
4 tbsp chicken breasts
1/2 cup all purpose flour
2 tsp non-stick cooking spray as needed
1 tsp garlic powder
1/4 cup mayonnaise
1/2 cup pretzel sticks
1 tsp salt
1 tsp pepper
Directions:
Preheat oven to 375 degrees.
Coat a baking sheet with non stick cooking spray.
Mix mustard and mayo in a bowl until smooth, set aside.
Place flour in a separate bowl and set aside.
In a zip-lock bag, put pretzels. Seal bag and pound bag until pretzels are broken into small pieces. Chop fried onion and add to bag, mix well and pour into a bowl.
Season chicken breasts with salt, pepper and garlic powder evenly on all sides.
Toss in flour until coated on all sides, shake off excess flour.
Dip breasts into mustard-mayo mix and generously coat all breast.
Toss in pretzel mix and coat well everywhere, and place on baking sheet.
Make sure breasts do not touch each other.
Spray tops and sides of breasts well with cooking spray.
Bake uncovered for 20 minutes or until center of chicken is cooked.
Serve and enjoy!
You can use low fat mayo for a leaner version.
You can make this into a sandwich by placing it on a bun.
Or chop it up when cooked and toss it in a salad! So good!
You can even make it into a wrap by placing it in a tortilla and adding some chopped greens! Note: use non-stick spray as needed.
