This was the best dish my Mother made! (I miss her sooooo much) Cooking her recipes brings her back through taste! I love the tangy/sweet sauce. When I was first married, busy and running late, I bought frozen fried chicken so I could use this sauce!
Ingredients:
1 tbsp FRENCH'S® Spicy Brown Mustard
2 cup crushed pineapple, with juice
1 cup brown sugar
1 tsp dry mustard
2 tbsp lemon juice
2 tsp vinegar
3 lb chicken thighs or breasts
1/2 cup butter, melted
1/2 tsp salt
1/2 tsp pepper
Directions:
Combine the first six ingredients in a jar. Shake well. Brush chicken with melted butter, the sprinkle with salt and pepper and bake at 350 for 30 minutes. For next 15 minutes, baste with sauce. Heat remaining sauce over medium sauce till warm--do not boil. Broil chicken for 5 minutes before serving. Serve with remaining sauce for dipping.
I personally use balsamic vinegar, as I an crazy about the stronger flavor!
This also does well on a grill!
