Pesto Stuffed Salmon

This salmon recipe is the perfect conclusion to a delightful day shared with cherished friends. One of my dear friend describes that this recipe "delighted my taste buds in a new and innovative way that I've never experienced salmon before."

Ingredients:

2 cup FRENCH'S® French Fried Onions

3 lb 6 portions of boneless, skinless salmon fillet (6 to 8 oz each or about 3 lbs total)

8 oz Mascarpone cheese

8 oz Prepared Pesto

2 tsp Dried Basil

Directions:

Mix together mascarpone cheese and pesto. Cut a slit lengthwise in each piece of salmon, leaving approximately 1/2 inch at the top and bottom. Fill each piece with the cheese and pesto mixture. Crush French Fried Onions in a plastic bag, then add basil and mix. Press mixture firmly on the top of each salmon fillet. Bake at 425 F for 10 to 12 minutes or until salmon flakes easily. ENJOY!!!
