This dish is a cinch to make. It impresses the adults and the orange relish entices the kids. Plus it’s nutritious! After the first bite, smiles will be on the faces of the whole family!
Ingredients:
1/4 cup FRENCH'S® Honey Mustard
2 large oranges
4 tsp olive oil, divided
1/4 tsp cinnamon
4 halibut fillets, about 5 ounces each (other firm white fish may be used)
1/4 cup chopped red bell peppers
1/4 cup thinly sliced (circles) seedless green grapes
1 tbsp chopped fresh flat-leaf parsley
1/8 tsp salt
Directions:
1. Grate 1 teaspoon zest from orange; cut one orange in half and squeeze 1 tablespoon juice. Combine zest, juice, mustard, 1 teaspoon oil, cinnamon and salt; remove and reserve 1 teaspoon. Spread remainder over sides of halibut; set aside.
2. To prepare relish, peel and section remaining 1 and 1/2 oranges, removing membranes; coarsely chop (about 3/4 cup orange pieces). Combine with bell peppers, grapes, parsley and reserved mustard mixture.
3. Heat a large nonstick skillet over medium heat; add remaining oil. Place halibut in skillet. Cook 4 to 6 minutes until lightly browned and cooked through, turning over once. Top individual servings with relish. Serves 4.
