Onion Chicken Skewers

Chicken is always a crowd pleaser and the honey rounds out the wonderful mustard spice. As the onions and chicken cook the whole dish sweetens and develops a very rich warm flavor.

Ingredients:

1 cup FRENCH'S® Dijon Mustard

1/2 cup Honey

2 cup Onion

1 tbsp Pepper

1/4 cup Vegetable or Olive Oil

2 lb Chicken

Directions:

Thoroughly combine the marinade ingredients in a large zip-top bag. Cut chicken into eight strips and place in bag with marinade. While chicken marinades (20 minutes) cut onions into 1/4 inch wedges. For grilling skewer chicken and onion on eight pre-soaked skewers. Place on pre-heated grill at medium to medium-high heat for approximately 20 minutes rotating as the chicken cooks. Baste the chicken and oinions with leftover marinade as it cooks. For baking place chicken and onion in large covered baking dish. Bake at 350 degrees for 20 minutes covered and approximately 5 minuted uncovered. For either preparation method the chicken is done when it reaches an internal temperature of 165 degrees (adjust cooking time accordingly).
My preference is to grill this dish but the baked chicken is so juicy and delicious as well. It is wonderful served with roasted green beans with oil, salt and pepper and baked potatoes with a variety of toppings to please everyone's palate.
