This is so easy, yet so elegant. Special enough for a dinner party or holiday meal!
1/2 cup FRENCH'S® Horseradish Mustard
2 tbsp chopped fresh flat-leaf parsley
2 Type an ingredient8-ounce filet mignon steaks (each about 2 inches thick)
8 oz Brie cheese (remove rind if desired), cut into 4 thick slices
2 green onions, chopped
Position rack in bottom third of oven and preheat to 450°F. Mix together mustard and parsley in small bowl.
Halve filets crosswise and season with salt and pepper. Heat oil over moderate heat in a large heavy skillet until hot but not smoking, then cook filets 2 minutes on each side. Transfer filets to small rimmed baking sheet.
Coat filets with mustard mixture. Bake until thermometer inserted horizontally into chops registers 135°F for medium-rare, about 5 minutes. Top each filet with a slice of brie and cook 2 minutes more. Transfer to plates. Sprinkle with green onions.
Brie cheese will slice easier if chilled.
