Minted Lamb Honey Dijon Burger

I only have rack of lamb on special occassions so this recipe reminds me of those occassions. I never have lamb without mint jelly which is why I use the honey dijon with the chopped mint in the ground lamb.

Ingredients:

6 tbsp FRENCH'S® Honey Dijon Mustard

1/4 cup FRENCH'S® French Fried Onions

1.5 cup Ground Lamb

2 tbsp Fresh Mint - chopped

1 Garlic clove - chopped

1/4 cup Fresh Italian Breadcrumbs

2.5 cup Spinach

4 Bun

Directions:

Combine fresh spinach with 3 tbs honey dijon mustard, toss until coated and set aside. Combine Lamb, fried onions, chopped mint, bread crumbs, minced garlic, salt, pepper & 3 tbs. of honey dijon mustard in a bowl. Form into patties. Grill until lamb patties are done. Serve on toasted buns and top with coated spinach.
