Fresh veggies, protein from the eggs...all made tasty with French's, yum! So easy, and can really turn into fancy-smancy using a pretty dish.

Ingredients:

2 tsp FRENCH'S® Spicy Brown Mustard

1/2 lb fresh green beans

2 tsp rice vinegar

2 tbsp olive oil

1 tsp minced onion

2 hard boiled eggs/halved

Directions:

To hard-cook eggs: place in deep saucepan and cover with water by 1 inch. Bring to boil over high heat, cover, remove from heat and let stand 13 minutes. transfer to ice bath to stop cooking. Peel eggs. Push through fine mesh seive. Let eggs sit and rest. Trim green beans. Place in skillet with 2 cups water. Boil till fork tender 5-6 minutes. Drain, cool. Meanwhile, whisk vinegarette containing vinegar, oil, mustard, onion, s/p. Place beans back in pan. Toss with 2tab vinegarette. To serve: position beans on serving platter, drizzle remaining vinegarette over beans. Top with grated eggs.
This dish can easily be doubled, tripled to accomodate any family gathering. The egg soaks up the vinegarette which makes it very tasty!
