1 lb ZUCCHINI
2 cup CHERRY TOMATOES
2 lb LARGE SWEET ONIONS
1 lb MUSHROOMS
3 tbsp VIRGIN OLIVE OIL
4 oz ORANGE MARMALADE
Directions:
WASH ALL VEGETABLES & CUT INTO 1" CHUNKS. CUT SALMON INTO 2" PIECES. MIX SPICES & MARINADE INGREDIENTS IN A BOWL. PLACE IN FRIDGE IN A ZIP-LOCK BAG FOR 30 MIN. LOAD ONTO SKEWERS ALTERNATING TYPES OF VEGETABES & SALMON. BARBECUE FOR 10-15MIN.ON MED HEAT & BASTE WITH EXTRA SAUCE WHILE COOKING. SERVE HOT & ENJOY!
