Manchego Mango Chicken Pizza Appetizer

Who wouldn't enjoy this delicious appetizer pizza! My family is not only smiling but they are begging for seconds! Try it and see if you can resist this mango-onion pineapple dijon topped pizza with shredded chicken and manchego cheese. Yummy!!!!!!!!!!!!!!!!!!!!!!!!! Ingredients:

2 tbsp FRENCH'S® Honey Dijon Mustard

1 tbsp olive oil

1 Medium walla walla sweet onion, chopped

1 firm ripe mango, seed removed, peeled and cut into 1/4-inch pieces

1/2 cup pineapple preserves

1 can (13.8 oz) refrigerated classic pizza crust

2 cup precooked rotisserie chicken, shredded

2 cup manchego cheese, shredded

Directions:

Heat oven to 400°F. Heat 10-inch skillet over medium heat. Add oil and onion; cook about 5 minutes, stirring occasionally, until onion is softened and starting to brown. Reserve 1/2 cup mango. Stir remaining mango into onion. Cook 3 minutes, stirring frequently. Stir in pineapple preserves and French’s honey Dijon mustard. Cook until warm about two minutes. Remove from heat; cool while preparing crust. Spray large cookie sheet with No-Stick Cooking Spray. Unroll pizza crust dough on cookie sheet; press dough into 15x10-inch rectangle. Bake 8 to 10 minutes or until edges just begin to brown. Spread mango-onion mixture over crust. Top with chicken; sprinkle with manchego cheese. Bake 8 to 10 minutes longer or until crust is golden brown and cheese is melted. Sprinkle with reserved 1/2 cup mango. Using a pizza cutter, Cut 24 small appetizing squares of this delicious pizza. Serves 24, prep time 20 minutes, baking time:20 minutes
