Mama's BANGIN' Mustard chicken and potatoes

If there is one dish that always puts a smile on my face this is it! Definately comfort food. My mom made this dish growing up and it will always be a meal I make for my family and friends. I am sure you and your family will enjoy this recipe for generations to come! Enjoy or better yet, Buen Provecho!!!!

Ingredients:

4 tbsp FRENCH'S® Classic Yellow® Mustard

4 Chicken leg quaters

1 Chopped green peppers

1 Chopped large sweet onion

2 tbsp Chopped garlic (4 cloves)

28 oz Chicken broth

6 Quartered med sized potatoes

2 tbsp Olive oil

28 oz water

1/2 tsp salt

1/2 tsp pepper

Directions:

Heat a large brasier or dutch over med/high heat. Once hot, add two tablespoons of olive oil along with the chopped onions, peppers and garlic. Cook until the onions and peppers are softened. Once done, remove them from the brasier and set it aside. Next, season the chicken with salt and pepper then using the same brasier you heated the onion, peppers and garlic on (do not rinse it out), lightly brown both sides of the chicken over med/high heat (skin side up first). Once browned, add back the peppers, onion, garlic along with the chicken broth, water and potatoes. Finally, add the special ingredient... 4 tablespoons of French’s classic yellow mustard and give it a little stir to get the mustard mixed in. Cover and cook over med/high heat for 40-45 mins and dinner is served!
Serve with white rice if desired, though I definitely recommend it! =)
