Made-from-the-Heart Meatloaf

This is total comfort food, especially good on a cold winter's night served along side of creamy sour cream & chive mashed potatoes and tender crisp buttered carrots. I remember the kids intently doing their homework and saying out loud, "Oh Mom, something smells sooooo good are you making your meatloaf?" It seems like they worked a little harder in anticipation of a great comforting meal that was sure to make them smile...and, me smile, because it was surely made from the heart!

Ingredients:

1/2 cup FRENCH'S® Classic Yellow® Mustard

2 lb Ground beef, lean

11/2 cup Ritz Crackers

1 cup onion

2 eggs

13/4 cup Ketchup

1/2 cup milk

1/3 cup brown sugar

1 tsp salt

1 tsp pepper

Directions:

Preheat oven to 350-degrees. Put ground round in mixing bowl, add finely crushed crackers, medium coarse chopped onion, eggs, salt, pepper, ketchup and milk. Gently mix together with your hands being careful not to over mix. Transfer mixture onto a jelly roll pan, forming into a log shape. Patting down to remove any air pockets. Bake for 35 minutes. Put on topping and bake for another 15 minutes or until juices run clear.
Take care not to over mix or texture will become mealy. While meatloaf is cooking, prepare topping. Topping: In a separate bowl mix together 1 c. ketchup, 1/2 c. French's Classic Yellow Mustard, and 1/3 c. brown sugar.
