Low Fat Mustard breaded Turkey Tenderloins

This recipe reminds me of being a kid. We eat it at our house as our "bad meal" but in reality as it adds smiles to our faces, it is not adding inches to our pants.

Ingredients:

1/4 cup FRENCH'S® Horseradish Mustard

1 cup FRENCH'S® French Fried Onions

8 oz Egg Beaters

2 cup All Purpose Flour

8 cup Fat Free Saltines

1 Pam Cooking Spray

4 HoneySuckle White turkey breast Cutlets

4 Pepperidge Farm's whole wheat hamburger bun

1 tsp salt

1 tsp pepper

Directions:

Needed items: Large Cookie Sheet, 3 large mixing bowls, Skillet or toaster oven (optional, for toasting buns) Preheat oven at 375 In first mixing bowl combine flour, salt and pepper In 2nd mixing bowl combine egg beaters and most of mustard (leave a small amount for adding to finished sandwich) In 3rd bowl combine *crushed* crackers and fried onions. Spray cookie with pam covering all of the sheet Take cutlet and place in flour mixture and turn over until the meat is covered with flour Then take this and place it in the egg mixture and flip until all sides have been coated with the egg. Take this and place in the cracker/onion and press down covering one side and flip over and do the same. Do this until the cutlet is sufficiently covered with the breading. Place on the cookie sheet and spray the top of the tenderloin with Pam. Repeat for the last 3 tenderloins. Place in the oven for 30 minutes then remove and flip over the tenderloins. Spray the tops with pam again and place back in the oven for 10-15 (or until it reaches an internal temperature of 165) Optional: About 5 minutes before the tenderloins are finished. Spray a little pam on the inside of the buns and toast on skillet or toaster oven until the edges are golden brown) Place tenderloin on buns and add the remaining mustard on the sandwich to taste.
This recipe is great when you add your favorite sandwich toppers. I suggest pickles and onions.
