Lentil Summer Salad

My whole family enjoys this salad. It is very nutritious and filling and even people who are on a diet, are always eat it without a hesitation.

Ingredients:

1 tbsp FRENCH'S® Honey Dijon Mustard

1/4 cup red wine or garlic wine vinegar

1/2 lb dried brown or red lentils

1 cup 1 yellow and 1 red onoin

1/2 tsp 4 garlic cloves

1/2 cup chopped red & green bell pepper

2 tbsp chopped fresh parsley

4 tbsp olive oil

Directions:

Place lentils, yellow onion halves, 3 garlic cloves in a large pan, cover with 4-6 cups of water. Cook approximately 15-20 min; do not let lentils get mushy. Strain lentils, discarding cooked onoin, garlic but reserving the luquid. Set lentils aside to cool. Place lentils in a large bowl, add salt and pepper to taste. Add chopped veggies, parsley and mix carefully. To make the dressing: Whisk 1/4 cup of the reserved cooking liquid, vinegar, olive oil, 1 minced garlic clove, mustard, salt and pepper. Add dressing slowly to blend with the salad.
This a delicious, refreshig salad for the summer. Lentils have a hearty, rich and nutty flavor. They are also part of a heart-healthy Mediterranean diet.
