LADY OF WINDSOR POTATO SOUP

My Potato Soup has been my children's favorite since they were small. This soup is a wonderful comfort food on any day of the year and is so easy to make. French's French Fried Onions ingredient makes it very special for taste and texture. You will love this soup. Also, the recipe is geared toward people who are watching their weight and who have high cholesterol.

Ingredients:

2.8 oz FRENCH'S® French Fried Onions Products

5 Potatoes, cleaned, cubed and jackets left on

2 14.5oz cans of Chicken Stock Fat Free 99%

1/2 Tablespoon Salt

1/4 Tablespoon Pepper

1/4 Cup Sour Cream

8 oz 2% milk

12oz can Evaporated Filled Milk

1 Tablespoon Parsley

Directions:

DIRECTIONS: 1. Potato Mixture in 1/2 gallon cooking pan, add cubed potatoes, 1-2.8oz can of French's French Fried Onions less 1/2 cup (Reserve 1/2 cup of French's French Fried Onions to place on top of soup in bowls/tureen), 2 cans of chicken stock, Salt and pepper Cook on medium heat until potatoes are soft to a fork puncture Drain stock from potatoes mixture into a reserved bowl or pan (Reserve chicken stock from potato mixture for additional liquid as needed) Place pan with potatoes mixture to one side 2. Liquid Mixture Mix in a large pan, sour cream, milk and evaporated milk, 1/2 cup reserved chicken stock and parsley. Mix and heat on medium heat until mixture is heated thoroughly, almost to a boil. Place the pan with potato mixture on stove at medium heat and gently add liquid mixture. Stirring gently and mashing potato mixture leaving some large cubes. Heat only. If needed, add additional reserved chicken stock for desired thickness. Remove from heat and serve with hot buttered baguettes. Spoon potato soup into individual bowls or tureen and top with reserved French's French Fried Onions.
