Kicked up Salmon Cakes

Alaskan canned salmon is not only heart healthy loaded with Omega 3's but it is usually wild and not farm raised. It is much more economical than fresh fish and can be made anytime. My daughter Emily gets very excited when I make this dish. I love to serve is with a creamy horseradish sauce.

Ingredients:

2 tbsp FRENCH'S® Spicy Brown Mustard

2 tbsp Mayonaise

2 oz 2 eggs

13 oz 2 Cans Alaskan Salmon

1 cup Italian Seasoned Breadcrumbs

1/2 cup Green Onions Sliced

2 tbsp Chopped Fresh Dill

2 tbsp Canola Oil

1/2 tsp pepper

Directions:

Drain canned salmon and remove skin and bones. In a large bowl, combine eggs, mustard, mayonaise and mix until combined. Add the salmon, breadcrumbs, green onions , dill and pepper. Mix well and form into patties. Heat 2 tablespoons of canola oil in a large skillet and saute patties until browned on both sides.
