HOT CHICKEN SALAD

IT IS "COMFORT FOOD". IT'S FANCY ENOUGH FOR FRIENDS WHEN SERVED WITH A CRISP GREEN SALAD. IT'S A PERFECT CASSEROLE TO TAKE TO A HOUSEBOUND FRIEND. IT'S EASY ENOUGH FOR A 7 OR 8 YEAR OLD TO PUT TOGETHER AND BRINGS A SMILE TO HER FAMILY'S FACE (AS WELL AS HERS) WHEN SHE SETS IT ON THE TABLE.

PREP TIME 10 min

Ingredients:

1 cup FRENCH'S® French Fried Onions

8 oz SHREDDED CHEDDAR CHEESE

3 cup DICED COOKED CHICKEN BREAST

1 tbsp MINCED ONION

1 cup DICED CELERY

1 cup SLICED WATER CHESTNUTS

1 cup MAYONAISE

1/2 cup SLIVERED ALMONDS

1 tsp salt

1 tsp pepper

Directions:

MIX ALL INGREDIENTS EXCEPT CHEESE AND FRENCH'S ONIONS. PLACE IN LIGHTLY GREASED 3 QT. CASSEROLE DISH. COVER WITH SHREDDED CHEESE AND FRENCH'S ONIONS. BAKE FOR 30 MINUTES AT 350 DEGREES.
THREE GENERATIONS HAVE ENJOYED THIS SIMPLE, DELICIOUS CASSEROLE. I LEARNED TO MAKE IT AT 10 YEARS OLD. IT BECAME A FAVORITE OF OUR BOYS AND NOW OUR GRANDCHILDREN LOVE IT. I OFTEN TWEAK IT A BIT, SOMETIMES ADDING SOME FRESH LEMON JUICE, OR FRENCH'S WORCHESTSHIRE SAUCE AND SOMETIMES BLACK OR GREEN OLIVES.
